How is a Gourmet Wine Tasting and Pairing Madrid?
Once you create a balance with the main flavor components in both the wine and the dish, you can get creative by combining the more subtle flavors.
Rules we like following and transgressing as well.
- The wine should be more acidic than the food.
- The wine should be sweeter than the food.
- The wine should have the same intensity of flavor as the food.
- Red wines pair best with intensely flavored meats (e.g. red meat).
- White wines go best with meats of light intensity (e.g. fish or chicken).
- Sour wines (e.g. red wines) are best balanced with fat.
- It is better to accompany the wine with the sauce than with the meat.
- Most of the time, white, sparkling and rosé wines create contrasting pairings.
- Most of the time, red wines will create congruent pairings.
